For those who live and grew up in the south, having a good time with your friends usually mean alcohol, music, food, and good vibes. Whether it’s at home, or at a restaurant, southerners usually have their favorite spots and stick to it. Just like how Ted from HIMYM gang would just hang out at McLaren’s.
Growing up in the southern Metro Manila area, this usually meant “Town” (Alabang Town Center) and in places like Cable Car, San Mig Pub, and Fat Tuesdays. Unfortunately, those classic hangouts have come and gone and that’s exactly the feel that Chef Jinggoy Fernando is trying to replicate.
Located on the 2nd Floor of Commerce Center Alabang is the South Pub. The moment we enter it’s reminiscent of those past favorites, the dim lighting, cocktail tables, wooden fixtures, a loaded bar and a smoking area.
Last March 2, 2018, was the grand opening of South Pub. Together with a few select media channels, we were invited to witness their ribbon cutting and to sample some of their best sellers.
Their food is simple in theme, Bar chow. They serve Filipino favorites but using elements and techniques borrowed from other cuisines, this makes their dishes special.
Nachos (270 PHP)
Flour tortilla chips, topped with cheese, ground beef, and salsa. Their nachos are served in a way that each chip you get is filled with all elements that you would want on your nachos. Great serving idea!
The Allison (350 PHP)
Grilled cheese with a savory sisig at the center with a tomato soup side. It shouldn’t work but it does. The tomato cuts the richness of the cheese and sisig.
Mushroom Chicharon (180 PHP)
Crispy oyster mushroom fried chicharron style. The aioli dip is perfect for the mushroom chicharron pieces and can be quite addicting.
Corned Crispy Pata (800 PHP)
72 hours brined pork pata creating a pink meat. Tender and Crispy, best with vinegar or mustard.
Sisig Rice (220 PHP)
Bits of sisig mixed together and topped with scrambled eggs. Tasty and perfect for your after drinking snack.
WHAT TO DRINK:
South Pub is loaded with an array of local and craft beer, liquors and spirits. Pick your poison, sit back and relax.
White Sangria (250 PHP)
White wine, Jameson, Orange Juice, Basil, and apple slices.
Akashi Whisky – Blue Label
Light and fruity whiskey with notes of peach, almond, and grape.
According to Chef Jinggoy, South Pub is not a 90’s bar, its a place where good friends can hang out, eat good food, and have a beer. It has all the elements of what southern hospitality feels like, it’s a home away from home.
