Japanese cuisine seems to be the favorite when it comes to the Filipino palate. For years, it’s remained the most popular foreign cuisine. And rightfully so, Japanese food has been around since World War II when the Japanese conquered the Philippines. Their food is simple, yet the way they prepare makes all the difference starting from the quality of ingredients.
Through the years we have all developed the love for sushi, sashimi, tempura, yakitori, and the teppanyaki that we have so many different Japanese restaurants all over Metro Manila. While there are so many available choices, not all of them have authentic Japanese.
From the moment you enter the Spectrum, you are welcomed into an elegant dining space with high ceilings and beautiful hanging fixtures that are sure to set the mood on your dining experience.
The theme of the Spectrum Japanese Buffet is Izakaya, Izakaya is bar chow in Japan so you will notice that dishes they showcased were typically found in these bars that were eaten when drinking sake or beer.
Sashimi and Sushi Selection
We were quite taken with the quality of Salmon Sashimi that Spectrum offered. This was the absolute FRESHEST Salmon Sashi we’ve ever had. The serving size is also very generous, as the chef asks you exactly how many slices you want. If you want a poke bowl, they also have that available.
Kushiyaki and Teppanyaki station
Have the fill of your choice of teppanyaki and yakitori with their prime cuts of meat and fresh seafood. They have a wide selection of salmon belly, top blade steak with scallions, pork belly, pork loin, boneless chicken thigh, shrimp, red snapper, and squid. We suggest trying the seafood teppan and their shrimp yakitori.
Don’t miss out on the Udon station. These bowls are by request, we suggest the beef udon, springy udon noodles on a bed of their beef broth and topped with greens, tamago, seaweeds, and tempura flakes. Each mouthful is comforting, you can taste that umami flavor from the broth and the different textures added to the dish elevate it even further. It’s quite addiciting.
Authentic Izakaya Fare
They also offer classic Izakaya Fare from Yakitori, Ebi Tempura, Kushikatsu, Teriyaki Chicken Wings, Gyoza, Edamame, and Tonkatsu. A must try is their mussels with spicy mayo and topped with Ebiko. These dishes are perfectly paired with Sake and Sapporo. It reminds me of our recent visit to Tokyo.
Savor their Japanese themed dessert spread with Matcha tiramisu and crepe cake, chestnut mont blanc, mushi-pan, Japanese pudding, black sesame crème brûlée, and a selection of mochi.
Aside from their excellent Japanese spread, they also have an international buffet that features an array of cold cuts and cheeses, salads, Italian, Chinese, and Filipino staple dishes.
Each stop was a mixture of varying aromas, heat, and exhibition. With each individual way of cooking and preparing the food. This is one reason why we believe Japanese food is special and so well loved within our culture. With Chef Ric Ramos at the helm, you’re sure to enjoy Japanese night. The key is carefully curated ingredients prepared using perfected techniques that produce simple yet, heartwarming traditional Japanese dishes.
