La Mère Poulard in Manila is the fourth branch of the renowned French restaurant. The original restaurant still sits in Mont Saint-Michel, while the two other branches can be found in Japan. There are only 4 La Mère Poulard in the whole world and that includes their venture here in the Philippines.

The restaurant was founded by Anne “Annette” Boutiaut (1851-1931), who married Victor Poulard on 14 January 1873 and founded the Hostellerie de la Tête d’Or, after finding that customers came and went quickly, gave them the idea of cooking giant omelettes in a wooden hearth in a certain way made these eggs puffy and frothy . This technique made it feel that the eggs were more like a souffle rather than an omelet in the mouth. This, along with a number of other recipes she had crafted, gained her the French honorary title “Mère” or “Mother,” which is only granted to excellent cooks. This was the beginning of La Mère Poulard’s worldwide reputation for its hospitality and well-executed dishes.

 

 

Their space is open with lots of natural light coming in. The dining room is decorated with the autographed pictures of some of the most famous patrons of yore: Eisenhower, Camus, Sophia Loren, JFK, Woody Allen.

It is mandatory that we order what they are famous for – their puffy omelet and it was delicious and well executed. Their Puffy Omellete can either be ordered as a savory meal or a sweet dessert. Its unique and exquisitely foamy omelette is but a component of a broader experience: the eggs are beaten in copper bowls at the entrance, adorned as a traditional cuisine.

They embrace the ‘Open Kitchen’ concept for full transparency and as a stage to view the flames, steam and clattering in the kitchen as part of the whole dining experience.

The omelettes are very good and unique enough that you need to try them just once in your life. True, the service is indifferent and the focus is on giving you what you ordered. But I say if you know what’s going there, you might be pleasantly surprised and glad you did.

Omelettes with mushroom truffle risotto and Foie Gras. This Off-the-menu item must be the best combination that I’ve tried here in La Mere Poulard. It’s rich, it’s heavy and each bite is delectable.

French cooking isn’t fancy or snobby, but if you look at in its simplest state. It’s all about layering flavors, mastering basic techniques, and savoring every bite.

 The staff is friendly and professional. Yes, it has a high price point reduced to just the eggs, it’s not worth the money. If you are sensitive to the charm and the history that built the brand and from where it came from, I think you will find it worthwhile.

La Mère Poulard in BGC is a great addition to the pouring in of great global brand & franchises in the Philippines. It comes to show that the Filipinos palette is evolving and the marketability of our demographic is at par with the other countries.

Let me tell you about this Gastropub in Poblacion. YES! In Poblacion. NO, I am not going to rave about another  “artsy”, “cute”, and “IG worthy”. Let the other platforms do that for you.  I want to share a worthwhile gastronomic experience I had with Hops & Brews. Located at the Ground Floor in the chic and new I’M Hotel along Makati Avenue, Hops & Brews brings its own inimitable and inventive take of global familiar flavors. Their food is modern and progressive, but the element that we fell in love with is that they’re able to keep the taste of comfort with each dish that we had.

 

The Gastropub Coining in Manila

 

The term “gastropub” was coined back in 1991 in London when two English men took over the Eagele Pub in Clerkenwell. Traditionally, pubs were just merely watering hole establishments and with typically little to no emphasis placed on the taste of food. The integration of this concept of a balanced approach to marrying a full kitchen restaurant and pubs rocketed and became a sub pop culture in British dining.  Fast forward to 2013, we see entrants in the local restaurant business adapting to this concept. Gastropub became a familiar flank of a name in your typical BGC and Makati neighborhood. As saturated as the concept is, so does the quality and taste of the food that most joints are serving. Which is fairly sad. Beers on tap are on point, but the usual suspect of their pitfall is the food that they’re serving. Instagram-worthy: YES, but Taste and Quality: Mediocre. Amongst the moshpit of concepts, there will always be these establishments who do stay true to their vision and have executed their ideas into a proper output.

Hops & Brews is one of those restaurants that can give you that “Aha!” moment. Finally, meal selections with proper flavors, serving size, and thoughtful execution of the owners and their roster of brilliant young chefs.

They carefully look into what the global street food is doing, pop-ups, and what fine dining to classical is doing and they’ve used bits and pieces that are relevant.

 

Food Impressions

Hops & Brews offer great drinks from morning ’til late at night. From single origin coffee, curated cocktails and then some. Global medleys of comfort grubs and all-day brunch selections. Their menu is that extensive that it can cater to any demographic.

Al Dente Rigatoni pasta tossed in Parmigiano, Mozzarella, Kefalotiri, and Cheddar. Applewood smoked bacon complimented the dish giving it a more dynamic flavor profile.

Prawn Tempura

 

This tempura overwhelmed us. We didn’t expect that a gastropub would be able to pull off a proper prawn tempura. Their tempura can challenge those Little Tokyo Japanese restaurants at any day.  Should the Fat Girls Day Out Curated Top 10 list for Ebi Tempura Hops & Brew’s will definitely be in the top 5.  The batter didn’t overwhelm the succulent shrimp retaining its fresh, clean, and sweet flavor.

Hainanese Fried Chicken

One of Hops & Brew’s signature mains that highlights their progressive thinking yet still copping that element of comfort. Imagine Sous-vide chicken using gastro-science to create the moistest and juiciest chicken then deep fried until crispy.

Sweets & Desserts 

Pilmico Research & Training Bakery cakes were presented during our visit. Pilmico is the food and agri-business subsidiary of Aboitiz Equity Ventures, Pilmico Foods Corporation is one of the largest flour milling companies in the country.  The Fat Girls Day Out crew absolutely love the Blackout Cake and the Pastillas de Leche Cheese Cake.

Why Go?

Sprouted from Makati’s hidden gem and sexy neighborhood Poblacion. Traditionally, it was known for years as a red-light district, Poblacion is trading its spunky reputation for seediness and skewing itself to be a place where cool is redefined. Heavily wheeled by white-collar Filipinos and expats, they infiltrate the mushrooming dining and drinking scene. Hops & Brew’s beautiful space and excellent menu roster is a great addition to the Poblacion scene where you can actually sit down and enjoy your meal or perhaps a glass or two of your drink of choice.

You have the very traditional elements on their menu which are then totally modernized, which is the way a lot of gastropubs operate – But Hops & Brews takes traditional and build on it, creating what we have which is a mixture of fine dining, pub food, and ultimately still retaining the emotional connection that we have with food which is; COMFORT.

Paula and I kicked off our WHERE to EAT series contents under Classic & Staple comfort foods. She created her top 5 list and now let me tell you about mine. When I was a kid, I would always remember going to Gloria Maris Restaurant, specifically the one in Greenhills. It was the first restaurant that offered my favorite dim sum “hakaw”(steamed shrimp dumplings). My family would always take us here for special occasions, Sunday lunches, and family reunions. We will drive all the way from Alabang to San Juan and it was always a special treat for my siblings and I. When Gloria Maris Alabang opened right beside St. Jerome Church, we skipped going to San Juan and became a loyal patron to this branch, it was just across our village that’s the time we would literally eat there on weekly basis!

What Gloria Maris Represents

 

This fine dining Cantonese style restaurant opened its first branch in Greenhills, San Juan back in 1995 and over the years, Gloria Maris triumphed in one aspect and that is consistency and that is probably the reason for all of their repeat customers. Gloria Maris represents celebration. It is an institution and it will continue to be one.  From its grandeur interior, how each meal is prepared and served. The sheer size of everything is just GRAND.

Deep fried rock lobster covered with thick superior sauce on a bed of noodles. The rock lobster was so fresh and so filled with meat it perfectly complemented the sauce and chewy egg noodles.

Stuffed Chicken (1,300php)

The moment they served the chicken, you could smell the enticing aroma. When you slice it open, it’s full flavored glutinous rice with chicken pieces, Chinese chorizo, chestnuts, and mushrooms. Who needs machang? They use the deboned chicken, instead of banana leaves

 

Mango Sago (size dependent| 70php-900php)

Best way to end our good is by having this cold, refreshing, and creamy dessert.

Our Overall Take

Gloria Maris is consistent, impressive, and grand. Whether you go for dim sum or hot pot, or a graceful lauriat. I like their elegance but still has this approachable ambiance.  Solid facilities that are conducive to family celebrations, knowledgeable staff, and of course their wonderful dishes.

This restaurant is arguably one of the best classic & staple places to get your Chinese food fix. The quality of the ingredients is obvious; the passion and flair of the chefs likewise.
