Paella is a dish that was originally farmers’ and farm laborers’ food. This dish was cooked by cooking over a wood fire for a lunchtime meal. This dish was traditionally made with rice, and vegetables available, and beans to add texture. There are cases where they even add a rabbit or duck when there is a special occasion, and they even add a dash of saffron. This dish was made in a pan with a flat bottom and traditionally ate in the pan with a wooden spoon.
While there is a variety of paella known to this day, they say a “true” paella Valenciana dish has no seafood but a mixture of chicken, rabbit, and snails with green and white beans.
Every 20th of September, in Valencia (Spain) the birthplace of Paella shares their international dish to the world by celebrating World Paella Day.
Here at Tapenade Restaurant at the Discovery Primea, they are bringing this international celebration to Manila from September 20 to 23 and let us celebrate World Paella Day!

Three kinds of mushroom on a bed of Paella rice. This is light and has a mild flavor. Simple, and elegant, yet delicious.
Paella con Jamón
This Paella is covered with bits of majestic ham queso de bola, topped with asparagus and chickpeas. Strong complimenting flavors and textures bring this dish to life.
